Chef Gray’s Spring Wine Selection
Spring is a transitional season for wines. As the cool weather begins to fade into warmer days and nights, the weight of the wine becomes more important than the color. This season I’m exploring the pairings of overdue Spring ingredients with Matanzas Creek Wines in an effort to acheive the delicate balance between the seasonal phase and viticulture.

Matanzas Creek Winery was founded in 1977 with a promise of showcasing the diversity of Sonoma County and producing handcrafted wines of world class quality. While much about California wine has changed in the last three decades, they are still guided by the same timeless principle – the bounty of Mother Nature is the best winemaker.

Sauvignon Blanc 2012
With its herbaceous & citrus notes, it pairs well with the first green herbs of the season. Parsley,   rosemary, basil, cilantro and mint are all wonderful accompaniments.

Chardonnay 2011
Has a silky texture that suggests lemon cream, white peach and pear. A terrific match with heartier  dishes, this wine will progress into honey and butterscotch with mineral accents.  glass 14                     bottle 55

Merlot 2010
Gives the essence of blackberry, moist earth, clove and white pepper which find balance with its  soft tannins. This is an exceptionally food friendly wine.
